"Comfort
me with apples," pleads the Song of Solomon, "for
I am sick of love." It's an appropriate thought for
autumn. The days are shrinking, the sun is pale, the leaves
are turning. The landscape withers in the crispening air,
yet, in the orchards, apples ripen and brighten into small,
suspended suns. Their juices detonate in the mouth with
honeyed sweetness and lemony tartness, a combination as
bracing as the brisk air. This lively interplay is delightful
on its own, even better when tempered by the nutty smoothness
of oats. It is a comforting match you needn't be lovesick
to embrace. Any of our pairings of perfect apples and
wholesome oats will transform your kitchen into a sweet
refuge alive with the soothing flavors of the season. |
APPLE
& OAT GRANOLA
4
cups old-fashioned oats
1/2 cup sunflower seeds
1/4 teaspoon salt
1 cup apple-juice concentrate, thawed
1/4 cup pure maple syrup
1 tablespoon canola oil
1/4 cup diced dried apples
1/4 cup dark or golden raisins
1/4 cup dried cranberries
Preheat
oven to 350°F. Lightly oil a baking sheet with sides
or coat it with nonstick spray.

In
a large bowl, combine oats, sunflower seeds and salt. Drizzle
with apple-juice concentrate, maple syrup and oil; toss until
evenly moistened. Spread on prepared baking sheet.
Bake
granola for 30 to 35 minutes, stirring every 5 minutes, until
light golden and crisp. Remove from oven and transfer to a
bowl. Toss with dried apples, raisins and dried cranberries.
Cool completely. (The granola will keep in a tightly selaed
container for up to 1 week or in the freezer for two months.)
Makes
about 6 cups.
