DENTE: Description
for the doneness of pasta cooked until tender
but firm to the bite.
ACKEE: a red-skinned,
pear-shaped fruit originally from Africa but now grown widely in the West
Indies. Fresh ackee is almost impossible to obtain outside the Caribbean, but
tinned ackee can be found in specialist food shops and some supermarkets. The
tinned variety has soft, fragile yellow flesh.
ALLSPICE: also known as
pimento or Jamaican pepper; available whole or ground. Tastes like a blend of
cinnamon, clove and nutmeg.
ANGOSTURA AROMATIC BITTERS:
Angostura is a brand name for a type of bitters. It is based on rum, infused
with bitter aromatic bark, herbs and spices.
ANISEED: also called
anise; the licorice-flavoured seeds of the anise plant.
