ARTICHOKE DIP

400 g can artichokes in water
1/4 cup low-fat mayonnaise
Freshly ground black pepper
2 tablepsoons low-fat ricotta cheese
1/3 cup low-fat grated cheddar cheese
1/4 teaspoon paprika
2 medium carrots

Drain artichokes, chop roughly. Combine in a food processor with mayonnaise, pepper, ricotta and cheddar cheese. Beat until just combined. Serve sprinkled with paprika. Cut carrots into long, thin slices, serve with dip.

Makes 1 1/3 cups (16 tablespoons).

Per tablespoon: 1.6g fat, 27 calories.
