PORK AND VEAL KOFTA

500g pork and veal mince
2 teaspoons ground cumin
2 cloves garlic, crushed
1 small onion, chopped finely
2 tablespoons finely chopped dried apricots
2 tablespoons chopped fresh coriander leaves
1 teaspoon hot paprika
90 g fresh chow mein noodles (or extremely thin fresh egg noodles), chopped

YOGURT SAUCE
3/4 cup low-fat plain yogurt
1 tablespoon chopped fresh mint leaves
1 teaspoon ground cumin
1 teaspoon sugar

Combine mince, cumin, garlic, onion, apricots, coriander, paprika and noodles in a large bowl. Roll level tablespoons of mixture into oval-shaped kofta; thread 3 kofta onto each skewer.

Cook kofta, in batches, in heated oiled grill pan (or grill or barbecue), until browned and cooked through. Serve kofta with yogurt sauce.

YOGURT SAUCE: Combine all ingredients in small bowl.

Serves 4.

Per serving: 4g fat, 222 calories.
