CARAMELISED
ONION TOASTS
2 tablespoons
olive oil
3 medium onions, sliced
2 teaspoons fennel seeds
4 slices stale sourdough bread, lightly toasted
1/3 cup grated gruyère cheese
1/3 cup chopped fresh parsley
Preheat
oven to 350°F. Heat oil in a nonstick
pan, cook onions, garlic and fennel seeds
over low heat for 15 minutes or until
caramelised. Spoon onion mix over toast,
sprinkle with cheese. Place onion toasts
in a baking dish. Bake for 15 minutes
or until cheese melts. Place onion toasts
onto serving plates. Sprinkle with parsley.
