BAKE-FRIED POTATOES

4 medium baking potatoes, peeled and cut lengthwise into 1/2-inch strips
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cumin

Preheat oven to 450°F.

In medium bowl, cover potatoes with cold water; soak 10 minutes. Drain well, blot dry with paper towels.

In nonstick roasting pan, combine potatoes, oil, garlic, salt, pepper, paprika and cumin. Bake 25 minutes, until golden brown, shaking occasionally.

Serves 4.
