BAKE-FRIED POTATOES

medium baking potatoes, peeled and cut lengthwise
into 1/2-inch strips
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cumin
Preheat
oven to 450°F.
In
medium bowl, cover potatoes with cold water;
soak 10 minutes. Drain well, blot dry with
paper towels.

nonstick roasting pan, combine potatoes, oil,
garlic, salt, pepper, paprika and cumin. Bake
25 minutes, until golden brown, shaking occasionally.
