CAJUN OVEN FRIES

2 tablespoons vegetable oil
2 teaspoons chili powder
1/2 teaspoon thyme
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
2 pounds baking potatoes, unpeeled, thinly sliced lengthwise

Preheat oven to 425°F.

In large bowl, combine oil, chili powder, thyme, black pepper and cayenne. Add potatoes, tossing to coat.

Divide among 2 baking sheets. Bake 40 minutes, turning once, until browned and crisp around edges.

Serves 4.

Per serving: About 264 calories, 4 g proteins, 47 g carbohydrates, 7 g fat, 24% calories from fat, 0 mg cholesterol, 29 mg sodium, 5 g fiber.
