CHAMPAGNE WITH RASPBERRIES

This classic combination is a stylish finish to any dinner. Blackberries or boysenberries make a lovely variation. You may use either fresh or defrosted frozen berries.

24 raspberries
6 teaspoons cognac or other brandy
1 1/2 teaspoon sugar
1 bottle (24 fl oz / 750 ml) brut champagne or other sparkling wine, well chilled

In each of 6 champagne flutes, place 4 berries, 1 teaspoon brandy, and 1/4 teaspoon sugar. Mash the berries gently with a spoon. Divide the sparkling wine among the glasses and serve immediately.

Serves 6.
