FROZEN
PEACH-CHAMPAGNE COCKTAIL
4
1/2 cups frozen sliced peaches (about 2
pounds)
1 cup pink Champagne
1/3 to 1/2 cup sifted powdered sugar
Fresh mint sprigs (optional)
Combine
the first 3 ingredients in a blender; process
until smooth. Place in a freezer container;
seal and freeze.
To
serve, let stand at room temperature 30
minutes or until slushy. Garnish with mint,
if desired. Serve immediately.
Makes
5 cups.
