LEMONADE

4 medium lemons
4 cups sugar
2 cups water
Mineral water

Remove rind from lemons using a vegetable peeler, avoiding white pith; reserve lemons. Combine rind, sugar and the water in large pan; stir over low heat, without boiling, until sugar is dissolved. Bring to boil, simmer, uncovered, without stirring, about 10 minutes or until syrup is thickened slightly; cool.

Squeeze juice from lemons (you will need 1 cup juice). Add juice to syrup, strain into jug; cover, keep refrigerated.

Just before serving, add 4 parts mineral water to 1 part lemonade, or to taste.

Makes about 1.25 litres undiluted lemonade (25 serves diluted).

Note: This recipe can be made up to 1 week ahead, keep refrigerated.
