QUICK MIX FRUIT CAKE

4 cups mixed dried fruit
1/2 cup red glacé cherries, quartered
2/3 cup firmly packed brown sugar
1 1/2 cups apple juice
2 egg whites, lightly beaten
1/4 cup canola oil
1/3 cup skim milk
2 tablespoons brandy
2 1/4 cups wholemeal self-raising flour
1 teaspoon mixed spice
1/2 teaspoon ground ginger
1 tablespoon brandy, extra

Line base and sides of deep 19cm-square or 22cm-round cake pan with two thicknesses of brown paper and one layer of baking paper, bringing paper 5cm above edge of pan. Combine fruit, cherries, sugar and juice in bowl; cover, stand overnight.

Stir in egg whites, oil, milk, brandy and sifted flour and spices. Spread mixture into prepared pan, decorate with extra cherries, if desired. Bake in 300°F oven 2 - 2 1/2 hours. Brush extra brandy over top while still in pan, cover cake with foil; cool.

Serves 12.

NOTE: Can be made 1 month ahead.
