RICE PUDDING

Made in small bowls or ramekins is fast and easy. Place 1-2 tablespoons of cooked rice in the bottom of each bowl. Top with a mixture of 4 eggs, 1/2 cup sugar, 2 1/2 cups milk and 1 teaspoon vanilla extract that has been whisked together. Place the bowls in a baking dish and half-fill the dish with hot water. Sprinkle with cinnamon or freshly grated nutmeg and bake in a preheated 315°F oven for 20-25 minutes or until puddings are just set. Remove from baking dish and eat warm or cold.
