CARROT AND BANANA CAKE

You will need about 4 medium carrots (480g) and 2 large overripe bananas (460g) for this recipe.

1 1/4 cups plain flour
1/2 cup self-raising flour
1 teaspoon bicarbonate of soda
1 teaspoon mixed spice
1/2 teaspoon ground cinnamon
1 cup firmly packed brown sugar
3/4 cup coarsely chopped walnuts or pecans
3 eggs, beaten lightly
2 cups finely grated carrot
1 cup mashed banana
1 cup vegetable oil

Preheat oven to 325°F. Grease 24cm springform tin, line base with baking paper.

Sift flours, soda, spices and sugar into large bowl, stir in remaining ingredients; pour cake mixture into prepared tin. Bake in 325°F oven about 1 1/4 hours. Cool cake in tin.

Serves 10.
