DATE AND WALNUT ROLLS

1 cup finely chopped seeded dates
60g butter
1 cup firmly packed brown sugar
1 cup water
2 cups self-raising flour
1/2 teaspoon bicarbonate of soda
1/2 cup coarsely chopped walnuts
1 egg, beaten lightly

Preheat oven to 350°F. Grease two 8cm x 19cm nut roll tins, line bases with baking paper. Place tins upright on oven tray.

Combine dates, butter, sugar and the water in small saucepan, stir over heat, without boiling, untl sugar is dissolved. Bring to a boil, remove from heat; cool.

Sift flour and soda into medium bowl, stir in date mixture, nuts and egg. Spoon mixture into prepared tins, place lids on tins.

Bake in moderate oven about 50 minutes. Stand rolls 5 minutes before removing lids and turning onto wire rack to cool.

Serves 24.
