BLUEBERRY AND BRAN MUFFINS

30g butter
3/4 cup honey
1/2 cup milk
1/2 cup vegetable oil
3 eggs
3 cups plain all-purpose flour
2 teaspoons baking powder
1/2 cup bran cereal
1 1/2 teaspoons ground cinnamon
1 apple, grated
2 bananas, mashed
250g blueberries
6 strawberries, halved

Preheat the oven to 350°F. Place butter and honey in a small saucepan and cook over medium heat for 5 minutes or until slightly caramelised.

Place milk, vegetable oil and eggs in a bowl and whisk.

Place flour, baking powder, bran and cinnamon in a bowl and mix to combine. Stir apple, bananas, and blueberries through flour. Add milk mixture and stir until dry ingredients are just moistened. Then fold in butter mixture until just combined, being careful not to overmix.

Set out 2 six-hole muffin trays with paper liners. Spoon muffin batter into each cup. Top each muffin with a strawberry half. Bake in the oven for 25-30 minutes or until the tops are golden and a skewer comes out clean. Cool slightly, remove cups from tray and serve.
