BANANA MAPLE SYRUP MUFFINS

2 cups self-raising flour
1/2 teaspoon ground cinnamon
1/2 cup sugar
300 g sour cream
1 egg
3 tablespoons maple syrup
3 tablespoons vegetable oil
3 bananas, chopped

Place flour, cinnamon and sugar in a bowl and mix to combine. Place sour cream, egg, maple syrup, oil and bananas in a bowl and whisk to combine. Add banana mixture to dry ingredients and mix until just combined. Spoon mixture into greased 1/2-cup capacity muffin tins and bake in a preheated 400°F oven for 25-30 minutes or until muffins are cooked when tested with a skewer. Serve with extra maple syrup.
