SPICED
HONEY CITRUS MUFFINS
3/4
cup milk
1/3 cup vegetable oil
1/4 cup honey
2 teaspoons grated lime, lemon or orange
peel
1 egg
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
Honey Citrus Glaze (recipe follows)
Heat oven to 400°F. Grease bottoms only
of muffin cups, or line with paper baking
cups.
Beat
milk, oil, honey, lime peel and egg in large
bowl with spoon. Stir in remaining ingredients
except Honey Citrus Glaze just until flour
is moistened. Divide batter evenly among
muffin cups.

Bake
medium muffins 20 to 22 minutes, miniature 10
to 17 minutes or jumbo 25 to 35 minutes or until
golden brown. Immediately remove from pan to wire
rack (place rack on waxed paper to catch glaze
drips). Brush glaze over warm muffins. Serve warm.
Makes
12 medium, 24 mini or 4 jumbo muffins.
HONEY
CITRUS GLAZE
2
tablespoons honey
1/4 teaspoon grated lime, lemon or orange peel
2 teaspoons lime, lemon or orange juice
Mix
all ingredients until well blended.
