ALMOND
AND STRAWBERRY FRIANDS
Rectangular
or oval friand pans are available from specialty
cookware and kitchen stores. Muffin pans
can also be used.
185g butter,
melted
1 cup almond meal
6 egg whites, beaten lightly
1 1/2 cups icing sugar mixture
1/2 cup plain flour
100g strawberries, sliced thinly
Preheat oven
to 350°F. Grease 12 (1/3 cup) rectangular
or oval friand pans, stand on oven tray.

Combine butter,
almond meal, egg whites, sugar and flour in medium
bowl; stir until just combined. Divide mixture
among prepared pans; scatter with strawberry slices.
Bake in moderately hot oven about 25 minutes;
stand in pans 5 minutes, turn onto wire rack to
cool.
Serve dusted with
a little extra sifted icing sugar.
