DOUBLE-CHOCOLATE MUFFINS

90g pitted prunes
1/2 cup warm water
2/3 cup caster sugar
3/4 cup skim milk
1 egg
1 egg white
1 1/2 cups self-raising flour
1/4 cup cocoa
1/3 cup choc bits

Spray an 1/3-cup muffin pan with cooking oil spray or line with paper muffin cases. Combine prunes and the water in a blender, blend until smooth. Add sugar, blend until smooth. Add milk, egg and egg white, beat until just combined. Pour into a bowl. Fold in sifted flour and cocoa, then fold in choc bits. Spoon mixture into muffin cases, bake in 350°F oven for 20 minutes or until firm to touch. Turn onto wire rack to cool.

Makes 12.
