FRESH ORANGE SORBET

This is great to serve on a hot day or as a palate cleanser during a fine meal.

2 1/2 cups water
1 cup sugar
Orange rind strips from 2 oranges
2 2/3 cups fresh orange juice (about 6 oranges)
1/3 cup fresh lemon juice (about 2 lemons)
Orange rind strips (optional)

Combine water and sugar in a saucepan; bring to a boil. Add orange and rind strips; reduce heat, and simmer 5 minutes. Discard orange rind strips; remove liquid from heat, and cool completely.

Add the orange juice and lemon juice; stir well. Pour mixture into the freezer can of an ice-cream freezer; freeze according to manufacturer's instructions. Cover and freeze 1 hour or until firm. Garnish sorbet with orange rind, if desired.

Serves 12.
