APPLE
GALETTE WITH RAISIN CARAMEL
9 small
apples
1 1/3 cups sugar
2 cinnamon sticks
2 tablespoons grated lime rind
1/3 cup lime juice
2 sheets (24cm x 24cm) puff pastry
2 tablespoons skim milk
1 tablespoon granulated sugar
RAISIN CARAMEL
1 1/4 cups sugar
15g reduced-fat margarine
100g raisins |

Halve apples lengthways,
peel, then scoop out cores with a teaspoon.
Place apples, sugar, cinnamon, rind and juice
in a medium pan. Barely cover with cold water,
cover pan and slowly bring to a simmer for
about 15 minutes. Remove pan from heat and
allow apples to cool to room temperature. Strain
apples and reserve the liquid, discard cinnamon
sticks and rind.
Place each sheet
of pastry on a lightly greased baking tray.
Brush each sheet all over with a llittle of
the skim milk. Roll up the sides of each pastry
sheet 3cm. Divide apple halves, cut side up,
between pastry sheets. Brush sides of pastry
with remaining skim milk, sprinkle pastry and
apples with granulated sugar. Bake in 400°F
oven for 40 minutes or until pastry is golden
brown. Serve apple galette with raisin caramel
and toffee pieces.
RAISIN CARAMEL:
Place 1/4 cup of the sugar into a heavy-based
pan and cook over a medium heat until it caramelises.
Pour onto a lightly oiled baking tray. Break
into small pieces when set. Place remaining
sugar in small pan and cook over medium heat
until it caramelises. Stir in 1 cup of reserved
apple cooking liquid, then swirl in the margarine
and raisins. Simmer for 5 minutes or until
caramel is slightly thickened.
Serves 6.
