SPICED FRUITY OATMEAL

1 1/2 cups apple juice
1/2 cup water
1/8 teaspoon salt
1 1/3 cups regular oats
1/4 cup sweetened dried cranberries or raisins
1/4 cup 1% low-fat milk
1 tablespoon brown sugar
3/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 tablespoons chopped walnuts

Combine the first 3 ingredients in a medium saucepan; bring to a boil. Stir in oats and cranberries; reduce heat, and simmer 4 minutes, stirring occasionally. Stir in milk, sugar, cinnamon, and nutmeg; cook 1 minute. Spoon into bowls; sprinkle with walnuts. 

Serves 4.

MICROWAVE VARIATION: Combine first 5 ingredients in a 2-quart glass measure or medium bowl, and microwave at HIGH for 4 minutes or until slightly thick, stirring after 2 minutes. Stir in milk, sugar, cinnamon, and nutmeg; let stand, covered, 1 minute. Spoon into bowls; sprinkle with walnuts.
