WINTER FRUIT IN VANILLA SYRUP

1 1/2 cups water
1 1/2 cups granulated sugar
1/8 teaspoon salt
2 tablespoons vanilla extract
1 teaspoon fresh lemon juice
1/2 teaspoon ground cinnamon
1/2 cup dried apricots
1/2 cup dried cranberries
1/2 cup dried plums
1/2 cup dried figs
3 pears, peeled, cored and sliced
3 tablespoons unsalted butter

In a medium saucepan, over medium-high heat, heat water, sugar and salt until sugar dissolves, stirring occasionally. Bring to a boil, reduce heat to medium and simmer about 10 minutes, until mixture is thick and syrupy.

Stir in vanilla, lemon juice and cinnamon. Add apricots, cranberries, dried plums, figs and pears and simmer about 20 to 30 minutes, until dried fruit becomes plump and pear slices are tender. Bring to room temperature, tightly cover and refrigerate overnight.

Before serving, bring to a simmer. Stir in butter until melted. Cool slightly and serve.

Serves 4 to 6.
