DEEP-FRIED APPLE RINGS

Serve warm with ice cream and maple syrup for a yummy dessert.

Preheat oil to 375°F | Deep-fryer

1 cup all-purpose flour
2 tablespoons cornstarch
1 tablespoon granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/2 cup granulated sugar
1/2 teaspoon cinnamon
5 medium apples
Oil or shortening for deep-frying

Combine flour, cornstarch, 1 tablespoon sugar, baking powder and salt in mixing bowl. Set aside.

Beat together egg and milk. Add to dry ingredients and whisk until well blended. Refrigerate for 1 hour.

Mix together 1/2 cup sugar and cinnamon. Set aside. Peel and core apples. Cut crosswise into 1/4-inch thick rings.

Heat 2 to 3 inches oil in deep-fryer. Dip apple slices in batter, allowing excess to drip back into bowl. Fry two to three at a time in hot oil, turning frequently, for 3 to 4 minutes or until golden brown. Drain on paper towels. Roll in cinnamon-sugar mixture. Serve warm.

Makes about 3 dozen rings.

TIP: Brush peeled apples with lemon juice to prevent browning.

Preparation time: 20 minutes | Refrigeration time: 1 hour | Frying time: 4 minutes per batch.
