BERRIES TO POUR

Puréed berries are just the right dress-up for frozen desserts, French toast, pancakes, and angel food cake. You can freeze the berry purée in ice cube trays, pop out the cubes, then store them in a sealable plastic bag in your freezer for up to 3 months.

4 cups fresh red or black raspberries, or sliced fresh strawberries
1/2 cup honey or 1/3 to 1/2 cup sugar
2 tablespoons water
2 tablespoons raspberry liqueur (optional)

Crush 3 cups of the berries with a potato masher. In a saucepan, combine crushed berries, honey or sugar, and water. Cook and stir until bubbly Cook and stir 2 minutes more or until slightly thickened. Cool slightly. Add remaining berries and, if desired, liqueur. Store, covered, in refrigerator up to 2 weeks. Serve warm or chilled.
