RICH CHOCOLATE SELF-SAUCING PUDDING

Preparation time: 15 minutes | Cooking time: 40 minutes

Cooking oil spray
1 cup self-raising flour
3/4 cup sugar
2 tablespoons cocoa powder
1/2 cup skim milk
1 teaspoon vanilla exxence
30g margarine, melted
1/2 cup firmly packed brown sugar
2 tablespoons cocoa powder, extra
1 1/3 cups hot water

Coat six 3/4 cup capacity dishes with cooking oil spray.

Sift flour, sugar and cocoa until large bowl. Add combined milk, essence and margarine; stir until smooth. Divide mixture between prepared dishes; sift combined brown sugar and extra cocoa evenly over top.

Carefully put the hot water over each pudding. Bake, uncovered, in 350°F oven for about 40 minutes or until puddings are firm. Serve dusted with sifted cocoa powder, if desired.

Serves 6.

Per serving: 4.6g fat; 307 calories.
