INDIVIDUAL BLACKBERRY CRUMBLES

3 cups blackberries
2 tablespoons sugar
1 cup all-purpose flour plus 1 tablespoon
1/2 cup firmly-packed brown sugar
1 teaspoon baking powder
3 tablespoons quick-cooking oats
100g unsalted butter, in small pieces

TO SERVE
Vanilla ice cream

Preheat oven to 400°F. Place the blackberries, sugar and the 1 tablespoon of flour in a bowl and toss well to combine.

Place sugar, baking powder, oats and remaining flour in a bowl and mix well. Add butter, and rub in with your fingertips until mixture resembles coarse breadcrumbs. Divide blackberries into two ovenproof bowls, and top with crumble mixture. Bake for 20-25 minutes until golden brown and bubbling. Serve warm, with ice cream.
