BAKED RICOTTA WITH CARAMELISED MANDARINS

1/2 cup fine fresh wholemeal breadcrumbs
600g reduced-fat ricotta cheese, drained
1/4 cup sugar
3 eggs, separated
1 tablespoon finely grated lemon rind
1/2 cup dried currants
4 large mandarins, peeled
1/3 cup firmly packed brown sugar
1 tablespoon lemon juice

Lightly grease 20cm-round springform pan; sprinkle base and sides with breadcrumbs. Combine ricotta, sugar, yolks and rind in a medium bowl; mix until smooth. Stir in currants.

Beat egg whites in a small bowl with electric mixer until stiff peaks form; fold into ricotta mixture. Pour ricotta mixture into prepared pan, bake in 350°F oven about 50 minutes or until cooked when tested and firm to touch.

Meanwhile, combine mandarins, brown sugar and juice in a medium heavy-based pan; cook over high heat for 4 minutes or until sugar caramelises.

Serve baked ricotta with caramelised mandarins.

Serves 8.
