CHOCOLATE MOUSSE CREAM PUFFS

Savor these decadent chocolate lover's indulgences alongside a cup of hazelnut coffee!

Chocolate Mousse (recipe follows)
3/4 cup plus 2 tablespoons all-purpose flour
2 tablespoons baking cocoa
1 tablespoon granulated sugar
1 cup water
1/2 cup butter or margarine
4 eggs

Powdered sugar or baking cocoa, if desired
Make Chocolate Mousse. Heat oven to 400°F. Mix flour, cocoa and granulated sugar; set aside.

Heat water and butter to rolling boil in 2 1/2-quart saucepan. Stir in flour mixture; reduce heat to low. Stir vigorously over low heat about 1 minute or until mixture forms a ball; remove from heat. Beat in eggs, all at once, with spoon; continue beating until smooth. Drop dough by scant 1/4 cupfuls about 3 inches apart onto ungreased cookie sheet.

Bake 35 to 40 minutes or until puffed and golden. Cool on wire rack away from draft, about 30 minutes. Cut off top third of each puff; pull out any strand of soft dough. Pipe or spoon mousse into puffs; replace tops. Dust with powdered sugar. Cover and refrigerate until serving. Store covered in refrigerator.

Makes 12 servings.

CHOCOLATE MOUSSE

4 egg yolks
1/4 cup sugar
1 cup whipping (heavy) cream
1 bag (6 ounces) semisweet chocolate chips (1 cup)*
1 1/2 cups whipping (heavy) cream

Beat egg yolks in small bowl with electric mixer on high speed about 3 minutes or until thick and lemon colored. Gradually beat in sugar. Heat 1 cup whipping cream in 2-quart saucepan over medium heat just until hot. Gradually stir at least half of the hot cream into egg yolk mixture, then stir back into hot cream in saucepan. Cook over low heat about 5 minutes, stirring constantly, until mixture thickens (do not boil). Stir in chocolate chips until melted. Cover and refrigerate about 2 hours, stirring occasionally, just until chilled. Beat 1 1/2 cups whipping cream in chilled medium bowl on high speed until stiff. Fold chocolate mixture into whipped cream.

*SUBSTITUTION: Use white baking chips for the chocolate chips in the mousse.
