BRIE PARCELS WITH ALMONDS

Creamy French Brie makes a sophisticated appetizer or light meal, wrapped in grape leaves and served hot with chunks of crusty bread.

4 large grape leaves, in brine
7-ounce piece Brie cheese
2 tablespoons chopped fresh chives
2 tablespoons ground almonds
1 teaspoon crushed black peppercorns
1 tablespoon olive oil, plus extra for brushing
Sliced almonds

Rinse the grape leaves thoroughly under cold running water and dry them well. Spread the leaves out on a clean work surface or chopping board.

Cut the Brie into four chunks and place each chunk on a grape leaf.

Mix together the chives, ground almonds, peppercorns and olive oil, and place a spoonful on top of each piece of cheese. Sprinkle with sliced almonds.

Fold the grape leaves over tightly to enclose the cheese completely. Brush the parcels with olive oil and cook on a hot grill for 3-4 minutes, until the cheese is hot and melting. Serve immediately.
