GRILLED GOAT CHEESE PIZZA

Pizzas cooked on the grill have a beautifully crisp and golden crust. The combination of goat cheese and red onion in this recipe makes for a flavorful main course dish.

5-ounce package pizza-dough mix
Olive oil, for brushing
2/3 cup tomato sauce
2 tablespoons tomato pesto
1 small red onion, thinly sliced
8 cherry tomatoes, halved
4 ounces firm goat cheese, thinly sliced
Handful shredded fresh basil leaves
Salt and freshly ground black pepper

Make up the pizza dough according to the directions on the package. Roll out the dough on a lightly floured surface to a round about 10 inches in diameter.

Brush the dough round with olive oil and place, oiled side down, on a medium grill. Cook for 6-8 minutes, until firm and golden underneath. Brush the uncooked side with olive oil and turn the pizza over.

Mix together the tomato sauce and pesto and quickly spread over the cooked side of the pizza, to within about 1/2 inch of the edge. Arrange the onion, tomatoes and cheese on top and sprinkle with salt and pepper.

Cook the pizza for 10 minutes more, until golden brown and crisp. Sprinkle with fresh basil and serve.
