COFFEE-BALSAMIC
MARINADE
In
a small bowl, dissolve 1 1/2 teaspoons instant-coffee
granules in 1/2 cup hot water. Stir in 3
tablespoons balsamic vinegar, 3 tablespoons
dark brown sugar, 1 tablespoon olive oil,
3 minced garlic cloves, 2 teaspoons crushed
black pepper and 3/4 teaspoon salt. Use
1/2 cup to marinate beef or lamb. Reserve
remaining marinade for basting.
Makes
about 1 cup, for 4 to 8 servings.
