CITRUS KEBABS

Serve these succulent grilled chicken kebabs on a bed of lettuce leaves, garnished with sprigs of fresh mint and orange and lemon slices.

4 chicken breasts, skinned and boned
Fresh mint sprigs, to garnish
Orange, lemon or lime slices, to garnish

FOR THE MARINADE
Finely grated rind and juice of 1/2 orange
Finely grated rind and juice of 1/2 lemon or lime
2 tablespoons olive oil
2 tablespoons clear honey
2 tablespoons chopped fresh mint
1/4 teaspoon ground cumin
Salt and freshly ground black pepper

Use a heavy knife to cut the chicken into 1-inch cubes.

Mix the marinade ingredients together in a large mixing bowl, add the chicken and cover with plastic wrap. Allow to marinate for at least 2 hours, or overnight in the refrigerator.

Thread the chicken onto metal skewers and cook on a medium grill for 10 minutes, basting with the marinade and turning frequently. Garnish with mint and citrus slices.

Serves 4.
