SALMON WITH FRESH PINEAPPLE SALSA

To prevent sticking, lightly grease the grill rack, and use a wide spatula to turn the salmon steaks halfway through the grilling time.

2 cups coarsely chopped fresh pineapple
1/2 cup chopped red sweet pepper
1/4 cup finely chopped red onion
3 tablespoons lime juice
1 small fresh jalapeño pepper, seeded and finely chopped
1 tablespoon snipped fresh cilantro or chives
1 tablespoon honey
4 4- to 6-ounce salmon steaks, cut 1 inch thick
1/4 teaspoon ground cumin

For salsa, combine the pineapple, sweet pepper, onion, 2 tablespoons of the lime juice, the jalapeño pepper, cilantro or chives, and honey in a medium bowl. Set aside.

Rinse fish; pat dry. Brush both sides of fish with remaining lime juice; sprinkle with cumin. Lightly grease the grill rack.

For a charcoal grill, place fish on the greased grill rack directly over medium coals. Grill, uncovered, for 8 to 12 minutes or just until fish begins to flake easily, turning once.

For a gas grill, preheat grill. Reduce heat to medium. Place fish on the greased grill rack; cover and grill as above.

Serve salmon steaks with the salsa.
