GRILLED CORN RELISH

Choose a firm-ripe avocado for this relish. At this stage it will slice easily and the pieces will hold their shape. Serve the relish with beef, pork, or chicken.

3 tablespoons lime juice
1 tablespoon cooking oil
2 cloves garlic, minced
2 fresh ears of corn
1 teaspoon chili powder
1 small avocado, seeded, peeled, and cut up
1/2 cup chopped red sweet pepper
1/4 cup snipped fresh cilantro
1/4 teaspoon salt

Combine the lime juice, oil, and garlic in a medium bowl. Remove husks from corn. Scrub ears with a stiff brush to remove silks. Rinse corn; pat dry. Brush corn lightly with some juice mixture. Sprinkle corn with chili powder.

For a charcoal grill, place corn on the grill rack directly over medium coals. Grill, uncovered, for 25 to 30 minutes or until tender, turning occasionally.

For a gas grill, preheat grill. Reduce heat to medium. Place corn on the grill rack. Cover and grill as above.

Meanwhile, add avocado, sweet pepper, cilantro, and salt to remaining lime juice mixture; toss well. Cut corn kernels from cob; stir into avocado mixture.
