HOISIN PORK IN GREEN ONION PANCAKES

2 teaspoons sesame oil
600 g pork fillet
Frozen, ready-made green onion pancakes (see note)
6 shallots (green onions), sliced
Hoisin sauce

Heat the oil in a frying pan over medium heat. Add the pork and cook for 3 minutes on each side, or until almost cooked through.

While the pork is cooking, heat the green onion pancakes following the packet directions and keep warm in the oven. To serve, slice the pork. Place a small pile of shallots onto each pancake. Top with the pork and hoisin sauce and roll up the edges to enclose the filling. Serve with steamed greens.

Serves 4.

NOTE: Green onion pancakes are easily found in the freezer section of Chinese and Asian supermarkets. You can also purchase them already cooked from most Chinese barbecue shops. If you have the time, use a basic crepe recipe and add 1/4 cup of chopped shallots.
