WAFFLES WITH VANILLA ESPRESSO SYRUP

6 waffles
Thick cream or ice cream to serve
Vanilla espresso syrup
1 cup freshly brewed strong espresso
3/4 cup caster (superfine) sugar
2 teaspoons vanilla extract

To make the syrup, place the espresso, sugar and vanilla in a saucepan and stir over low heat until the sugar has dissolved. Increase heat and simmer rapidly for 8 minutes or until the liquid is syrupy.

To serve, warm or toast the waffles and place on serving plates. Pour the vanilla espresso syrup over them and serve with thick cream or vanilla bean or espresso ice cream.

Serves 4.
