THE PERFECT STEAK

4 thick New York or sirloin steaks
Oil
Cracked black pepper

Heat a frypan over medium heat for 5 minutes or until hot. Brush steaks with a little oil and sprinkle with cracked pepper.

Place steaks in frypan and do not turn until they are sealed.

Cook steaks until juices rise to the uncooked side, which usually takes about 1 1/2 minutes. Turn steaks and cook for 1 minute more for medium rare, or for 2 minutes more for medium to well done.

Test to see if steaks are ready by pressing them with tongs. The less movement, the more cooked they are. Avoid cutting steaks to see if they are cooked, as this only releases the juices and dries them out.

Serves 4.
