SEASONED BEEF FILLET

1 medium brown onion, chopped finely
2 tablespoons finely chopped walnuts
1/2 cup stale breadcrumbs
1/2 teaspoon finely grated orange rind
1 tablespoon dry red wine
1/4 cup seeded mustard
2 tablespoons chopped fresh chives
500 g piece beef fillet
1/2 cup orange juice

Heat oiled small pan; cook onion, stirring, until soft. Combine onion, nuts, breadcrumbs, rind, wine, 2 tablespoons of the mustard and chives in small bowl. (Can be made ahead to this stage. Cover, refrigerate until required.)

Cut deep pocket in side of beef, place seasoning in pocket; secure with kitchen string. Heat oiled flameproof baking dish; brown beef all over. Bake beef, uncovered, in hot oven about 25 minutes or until cooked as desired. Remove beef from dish, cover, rest 5 minutes; slice thickly. Heat same dish, stir in remaining mustard and juice; cook, stirring, until mixture boils. Serve sauce with beef.
