GARLIC BEEF WITH SPICED COUSCOUS

1 tablespoon oil
3 cloves garlic, sliced
2 sirloin steaks
Spiced couscous
1 cup couscous
1 1/2 cups chicken stock, boiling
2 tablespoons butter
2 teaspoons cumin seeds
2 tablespoons chopped coriander
Cracked black pepper and sea salt

To make the spread couscous, place the couscous and stock in a bowl. Cover tightly with plastic wrap and allow to stand for 4-5 minutes or until the stock has been absorbed. While the couscous is standing, heat the butter in a frying pan over medium heat. Add the cumin seeds and cook for 2 minutes. Then add the couscous, coriander, pepper and sea salt and cook for 1 minute or until heated through. To cook the steak, heat oil in a frying pan over high heat. Press the garlic slices into the steaks and place in the hot pan. Cook for 2 minutes on each side or to your liking. Serve steak on couscous with steamed greens.
