FILLET STEAKS WITH BELL PEPPER PESTO

4 (600g) beef fillet steaks
2 tablespoons chopped fresh basil leaves

BELL PEPPER PESTO
1 large red bell pepper, seeded, quartered
1/4 cup sun-dried tomatoes in oil, rinsed
2 teaspoons grated fresh ginger
1 teaspoon sugar

Cook beef on heated, oiled, barbecue plate until browned both sides and cooked as desired. Serve steaks topped with bell pepper pesto and sprinkled with basil.

BELL PEPPER PESTO: Grill pepper pesto, skin side up, until blackened, cool. Peel away skin, chop bell pepper roughly. Blend or process bell pepper, sun-dried tomatoes, ginger and sugar.

Serves 4.
