FILLET
STEAKS WITH BELL PEPPER PESTO
4 (600g)
beef fillet steaks
2 tablespoons chopped fresh basil leaves
BELL PEPPER
PESTO
1 large red bell pepper, seeded, quartered
1/4 cup sun-dried tomatoes in oil, rinsed
2 teaspoons grated fresh ginger
1 teaspoon sugar
Cook beef
on heated, oiled, barbecue plate until
browned both sides and cooked as desired.
Serve steaks topped with bell pepper
pesto and sprinkled with basil. |

BELL PEPPER PESTO:
Grill pepper pesto, skin side up, until blackened,
cool. Peel away skin, chop bell pepper roughly.
Blend or process bell pepper, sun-dried tomatoes,
ginger and sugar.
Serves 4.
