BEEF AND ALE WITH POTATO MASH AND MUSTARD

500g beef round steak, coarsely chopped
2 small onions, roughly chopped
2 cloves garlic, crushed
2 large carrots, roughly chopped
2 tablespoons plain flour
1 cup light ale
3 cups beef stock
800g potatoes, halved
1 cup skim milk
2 tablespoons seeded mustard

Cook steak, in batches, in lightly oiled, large saucepan. Add onion, garlic and carrot; cook, stirring, until onion is soft. Stir in flour; cook 1 minute. Add ale and stock; simmer, covered, about 1 hour 15 minutes or until beef is tender.

Meanwhile, boil, steam or microwave potato until tender; drain. Mash potato with milk until almost smooth. Stir in mustard until just combined.

Serve beef with potato.

Serves 4.
