GRILLED LAMB WITH NECTARINES

4 small ripe nectarines
2 tablespoons orange juice
1 tablespoon brown sugar
8 lean lamb cutlets
1 tablespoon olive oil
1 tablespoon fresh thyme leaves
Freshly ground black pepper
2 tablespoons fruit chutney

Preheat grill to high. Halve and deseed unpeeled nectarines. Combine in a bowl with orange juice and sugar. Brush cutlets with oil, sprinkle with thyme and pepper. Grill nectarines, cut side up, until golden brown. Meanwhile, grill cutlets under high heat, for about 2 minutes on each side or until cooked to your liking. Spread cutlets with chutney, top with nectarines.

Serves 4.

NOTE: Serve with 70g baby English spinach leaves, if desired.
