PORK WITH GINGER AND HONEY

500 g pork fillet
2 cloves garlic crushed
2 tablespoons lemon juice
1 tablespoon oil
2 fennel bulbs sliced
2 teaspoons oil, extra
4 tablespoons shredded ginger
4 tablespoons honey
1/2 cup Calvados or brandy

Trim pork of any fat or sinew. Place pork in a bowl with garlic and lemon juice, and allow to stand for 5 minutes. Heat oil in a frypan over medium heat. Add pork and cook for 2 minutes on each side or until well browned. Place fennel in a baking dish, place pork on top of fennel and cover dish. Bake at 350°F for 15 minutes or until pork is cooked to your liking.

While pork is cooking, heat extra oil in a saucepan over medium heat. Add ginger and sauté for 1 minute. Add honey and Calvados and simmer for 4-5 minutes or until sauce has reduced by half.

To serve, slice pork and place on serving plates with fennel. Top with ginger and honey glaze.
