SATAY PORK AND NOODLE STIR-FRY

500 g fresh egg noodles
1 tablespoon vegetable oil
500 g pork fillet, sliced thinly
2 cloves garlic, crushed
8 green onions, sliced thinly
3/4 cup beef stock
1/3 cup crunchy peanut butter
1/4 cup sweet chili sauce
2 teaspoons lemon juice
400 g packet fresh Asian-style stir-fry vegetables

Place noodles in large heatproof bowl, cover with boiling water, stand until just tender; drain.

Heat half the oil in wok or large pan, stir-fry pork, in batches, until browned. Heat remaining oil in wok, add garlic and onion, stir-fry until soft.

Add stock, peanut butter, sauce and juice, simmer, uncovered, 1 minute.
Return pork to wok with vegetables and noodles, cook, stirring, until hot.

Serves 6.
