STIR-FRIED PORK AND VEGETABLES

Preparation time: 15 minutes | Cooking time: 15 minutes

200g pork fillet, sliced thinly
2 teaspoons oil
1 small red onion, sliced thickly
400g bok choy, halved lengthways
150g baby green beans
250g fresh asparagus, halved
1 tablespoon black bean sauce
1/2 cup water
1 tablespoon honey
2 tablespoons salt-reduced soy sauce
1 teaspoon grated fresh ginger
2 teaspoons cornstarch

Cook pork in heated medium nonstick saucepan, until well browned and tender; remove from pan.

Heat oil in same pan; cook onion, stirring, about 1 minute, or until onion is soft. Add bok choy, beans and asparagus; cook, stirring, until vegetables are tender.

Stir in combined remaining ingredients; return pork to pan. Stir over high heat until mixture boils and thickens. Serve with steamed jasmine rice, if desired.

Serves 2.

Per serving: 7.9g fat; 285 calories.
