CRISP PANCETTA BAKED PORK FILLET

12-14 slices pancetta
350 - 400 g pork fillet
1 apple, sliced
2 teaspoons oil
2 tablespoons sage leaves
Cracked black pepper

Preheat oven to 425°F. Wrap the pancetta around the pork fillet to enclose. Place the skinned apple in the base of a baking dish and top with the pork. Sprinkle with the oil, sage and pepper.

Bake in the oven for 12 - 15 minutes or until the pork is cooked to your liking. Serve the pork thickly sliced with a peppery rocket (arugula) salad.

Serves 2.

NOTE: This recipe is also great with the pork wrapped in thinly sliced prosciutto.
