PORK CUTLETS WITH GINGER SWEET POTATO MASH

2 pork cutlets
Sesame seeds
Oil

GINGER SWEET POTATO MASH
400 g (13 oz) sweet potato, peeled and chopped
2 tablespoons shredded ginger
30 g (1 oz) butter
1 tablespoon honey
Milk
2 tablespoons coriander leaves

To make the mash, place the sweet potato and ginger in a saucepan of boiling water and cook for 5-7 minutes or until tender; drain. Mash the sweet potato with the butter, honey and enough milk to make it smooth. Stir coriander through the mash.

While the sweet potato is cooking, press the pork cutlets in the sesame seeds and coat each side. Heat oil in a frying pan over medium heat and cook pork for 2-3 minutes on each side or until golden and cooked to your liking. Serve with mash and steamed greens.

Serves 2.
