SWEET POTATO MASH
400 g (13 oz) sweet potato, peeled and chopped
2 tablespoons shredded ginger
30 g (1 oz) butter
1 tablespoon honey
Milk
2 tablespoons coriander leaves
To
make the mash, place the sweet potato and
ginger in a saucepan of boiling water and
cook for 5-7 minutes or until tender; drain.
Mash the sweet potato with the butter, honey
and enough milk to make it smooth. Stir
coriander through the mash.
