STIR FRY PORK AND SHIITAKE

2 teaspoons sesame oil
2 teaspoons oil
2 tablespoons shredded ginger
2 cloves garlic, sliced
500 g pork fillet, sliced
Cornflour
200 g fresh shiitake mushrooms
1/2 cup Chinese cooking wine or sherry
3 tablespoons soy sauce
8 baby bok choy, leaves separated

Heat the oils in a wok or frying pan over high heat. Add the ginger and garlic and cook for 1 minute. Lightly toss the pork in cornflour and shake away excess. Add the pork to pan and cook for 4 minutes or until well sealed.

Add the mushrooms, wine, soy and bok choy to pan and stir fry for 3-4 minutes or until mushrooms and bok choy are tender. Serve with rice and small bowls of chopped chili on the side.

Serves 4.
