ROAST PORK AND APPLES WITH MUSTARD FRUITS

8 small apples
2 cups apple juice
2/3 cup apple cider vinegar
1.25kg boneless rolled pork loin
Cooking oil spray
2 teaspoons cornflour

MUSTARD FRUITS
1 cup caster sugar
1 cup water
2 cinnamon sticks
2 cups dried apricots
9 dried pears
1/3 cup apple cider vinegar
1 tablespoons dry mustard

Slit skin around center of apples, place apples in baking dish; pour over juice and vinegar. Remove skin and all fat from pork, spray lightly with oil and place on oiled wire rack; put pork and rack on top of apples in dish. Bake, uncovered, in 350°F oven about 1 hour or until apples are tender. Remove apples from dish, wrap in foil, return pork to dish, bake another 1 hour or until pork is tender. Remove pork from dish, cover with foil to keep warm. Skim away fat from pan juices. Stir in cornflour blended with 2 teaspoons water and stir until sauce boils. Serve pork immediately with apples, mustard fruits and sauce.

MUSTARD FRUITS: Combine 3/4 cup of the sugar with the water in medium pan, stir over low heat until sugar is dissolved. Add cinnamon and fruit to pan; stir, over low heat, about 10 minutes or until fruit is soft. Add remaining sugar and vinegar to pan, stir about 5 minutes or until thick and syrupy. Cool slightly, stir in mustard.

Serves 8.

Per serving: 14.4g fat, 587 calories.
